
The restaurant will be certified by the Verace Pizza Neopoletana Association - an organization established to cultivate and preserve the culinary art of making Neapolitan pizza. Nicli will be using only the best ingredients and will be taking no short cuts in ensuring a product true to Naples-style pizza, with "00" Caputo flour and real San Marzano's tomatoes; Tomatoes grown only on the volcanic plains to the south of Mount Vesuvius, nine kilometres East of Naples.


Nicli is set to open in mid-February. The traditional dough and baking techniques are now in their final stages of perfection. Today, Bill and his team will have pizzas in the wood-burning brick oven, enjoying a delicious Italian feast as they work on Nicli's finishing touches.
