Over 20 years.

I was a bartender at the Swallow Hotel in Birmingham.

What is your bartending pet peeve? What might happen at work that really grinds your gears?
Mixologists.
Do you have a go-to cocktail or beverage for at home? Tell us a bit about your favorite personal recipe.
My favourite cocktail at home would be a Beefeater Crown Jewel martini, though I don't drink at home.
Name something every great bartender should own?
A corkscrew.
What do you drink when you go out? What's your usual order?
I like drinking whiskey and great North American ales.

We keep hearing that Gastown is such a great place to be a bartender right now. Why is that?
Gastown reminds me of Soho and Shoreditch back in the UK; All the industry get along and work togther. It's a really great atmosphere.
What is the first thing that comes to mind when you read the following: "BCLDB"?
Dante's Inferno.
What are some of the most unlikely ingredients you have used in making a cocktail?
Baked bread essence, english christmas puddings, custard, hot crossed buns, bacon......
Do you have a favorite beer or wine?
My favourite beer is whatever Pete Southal gives me at rogue, I trust his judgement.
What is a must-have on your food menu?
Anything French.

That's not easy, I love all the bars in Gastown. It depends on what, where and when?!
